15 Minute Tahini Noodles
These are possibly the best noodles I’ve ever made - so quick and easy but so much flavour.
Tahini is such a great ingredient - I love it for salad dressings, sauces as well as sweet treats. It adds such a rich and creamy texture to the sauce and overall dish.
Serves 2
4 garlic cloves, finely chopped
1/2 broccoli, chopped
200g mushrooms, sliced
1 bunch bok choy, chopped
300g rice noodles
For the sauce
3 tbsp tahini
2 tbsp maple syrup or any liquid sweetener
1 tbsp sesame oil
2 tbsp soy sauce
In a hot pan add the garlic, broccoli and mushrooms. Sauté for 5 minutes until lightly cooked. Then add in the bok choy cooking again for a couple of minutes.
Pre cook your noodles, drain and them to the pan.
Make the tahini sauce by mixing together all of the sauce ingredients. Pour the sauce into the pan and mix everything well to combine.
Add to a bowl and top with sesame seeds.
