I love making a batch of this super easy granola to have for the week. The chewy dried apricots are delicious with the crunchy nuts and seeds. I also love it to top onto my smoothie bowls.
1 ½ cups oats
½ cup chopped nuts, I use almonds
½ cup seeds, I use pumpkin and sunflower
½ tsp salt
1 tsp cinnamon
¼ cup tahini
¼ cup honey
½ cup dried apricots, chopped
Pre heat your oven to 180 degrees and line a baking tray with baking paper.
In a large bowl mix together the oats, nuts, seeds, cinnamon and salt. Then add in the tahini and maple syrup, mix until all of the dry ingredients are wet.
Pour onto the lined baking tray and spread out evenly. Place in the oven to cook for 20 minutes, tossing halfway.
